Preparation

    Marinate the Chicken

    In a bowl, combine the soy sauce, brown sugar, minced garlic, and grated ginger. Add the boneless chicken breast cut into bite-sized pieces and let it marinate for at least 30 minutes.

    Prepare the Vegetables

    While the chicken is marinating, chop the green bell pepper, carrot, and onion into bite-sized pieces. Set aside.

    Prepare the Sauce

    In a small bowl, mix 1 tbs of cornstarch with 2 tbs of water to create a slurry. This will help thicken the sauce later.

Cooking

    Cook the Chicken

    In a large pan or wok, heat 2 tbs of vegetable oil over medium-high heat. Add the marinated chicken and cook until golden brown and cooked through, about 5-7 minutes. Remove from the pan and set aside.

    Stir-Fry the Vegetables

    In the same pan, add another tbs of vegetable oil. Add the chopped onions, green bell pepper, and carrot. Stir-fry for 3-4 minutes until they are slightly tender but still crisp.

    Combine Everything

    Return the cooked chicken to the pan with the vegetables. Pour in the remaining marinade and the cornstarch slurry. Stir to combine and cook for another 2-3 minutes until the sauce thickens.

    Finish and Serve

    Drizzle with sesame oil and sprinkle chopped green onions on top. Serve hot over cooked rice.
