Method

Preparation

  1. 1

    Prepare the Steak

Remove the NY Strip steaks from the refrigerator and allow them to come to room temperature for about 30 minutes before cooking. This ensures even cooking.

  2. 2

    Season the Steak

Generously season both sides of the steaks with kosher salt, black pepper, garlic powder, and fresh rosemary. Pat the seasoning into the meat for better adherence.

Cooking

  1. 3

    Preheat the Pan

Heat a cast-iron skillet or heavy-bottomed frying pan over medium-high heat for about 5 minutes until it's hot.

  2. 4

    Add Oil

Add olive oil to the hot pan. Swirl the pan to evenly coat the bottom.

  3. 5

    Sear the Steaks

Carefully place the seasoned NY Strip steaks into the hot pan. Sear for about 4-5 minutes on one side without moving them to achieve a nice crust.

  4. 6

    Flip the Steaks

Using tongs, flip the steaks over and cook for an additional 3-4 minutes for medium-rare, or longer if desired.

  5. 7

    Add Butter and Herbs (Optional)

In the last minute of cooking, add butter and fresh thyme to the pan. Spoon the melted butter over the steaks to enhance flavor.

Resting and Serving

  1. 8

    Rest the Steaks

Remove the steaks from the pan and place them on a cutting board. Let them rest for at least 5-10 minutes to allow the juices to redistribute.

  2. 9

    Slice and Serve

Slice the steaks against the grain and serve immediately, optionally garnished with additional fresh herbs.
