Prepare the Mushroom Topping

Sauté Shiitake Mushrooms
In a skillet over medium heat, add 1 tablespoon of garlic oil. Once hot, add the shiitake mushrooms and sauté for about 5-7 minutes or until they are tender and beginning to brown. Remove from heat and set aside.
Cook the Burger Patties

Cook Impossible Patties
In the same skillet, add another tablespoon of garlic oil. Heat over medium-high heat. Place the Impossible meat patties in the skillet and cook for about 3-4 minutes on each side, or until they have a nice sear. Top each patty with a slice of Swiss cheese in the last minute of cooking to allow it to melt.
Assemble the Burger

Build the Burger
Toast the brioche buns lightly in the skillet or on a grill. On the bottom bun, spread 2 tablespoons of chive mayo. Place the cooked Impossible patty with melted Swiss cheese on top. Add the sautéed shiitake mushrooms, a slice of beefsteak tomato, and a handful of baby arugula. Finish by placing the top brioche bun on the burger.
