Pork Preparation

    Marinate the Pork

    In a large bowl, combine garlic cloves (minced), orange juice, lime juice, cumin, oregano, salt, and black pepper. Add the pork shoulder and coat it evenly. Cover and marinate in the refrigerator for at least 4 hours, preferably overnight.

    Roast the Pork

    Preheat your oven to 300°F (150°C). Place the marinated pork shoulder in a roasting pan and cover it with aluminum foil. Roast for approximately 3 to 4 hours or until the pork is tender and easily shredded. Remove from the oven and let it rest before shredding.

    Prepare the Ingredients

    While the pork is resting, slice the Cuban bread in half lengthwise. Shred the cooked pork shoulder and set aside.

    Assemble the Sandwich

    On the bottom half of each Cuban bread roll, layer shredded mojo pork, honey ham, Swiss cheese, and dill pickles. Spread mustard aioli on the top half of the roll and place on top to complete the sandwich.

    Grill the Sandwich

    Preheat a panini press or a skillet over medium heat. Place the assembled sandwiches in the press or skillet. If using a skillet, press down with a heavy pan. Cook for about 3-5 minutes on each side until the bread is toasted and the cheese is melted.

    Serve

    Remove the sandwiches from the heat, slice diagonally, and serve warm with extra dill pickles and mustard aioli on the side.
