Pork Preparation

    Marinate the Pork

    Place the pork shoulder in a large bowl and pour the mojo marinade over it. Ensure the pork is well-coated. Cover and refrigerate for at least 2 hours, preferably overnight.

    Cook the Pork

    Preheat your oven to 300°F (150°C). Transfer the marinated pork to a roasting pan and cover it with foil. Roast for approximately 3-4 hours or until the pork is tender and easily shreds with a fork. Remove from the oven, let it rest for 20 minutes, then shred the pork using two forks.

Assembling the Flatbread

    Prepare the Flatbread

    While the pork is cooking, preheat your grill or a skillet over medium heat. Place the flatbreads on the grill or in the skillet for about 2 minutes on each side, until warm and slightly crispy.

    Add the Toppings

    Layer the shredded mojo pork evenly over each flatbread. Sprinkle the pepper jack cheese on top, followed by the roasted red peppers, pickled red onions, and micro basil.

    Melt the Cheese

    Return the flatbreads to the grill or skillet, cover, and cook for an additional 2-3 minutes until the cheese is melted and bubbly.
