Bacon Preparation

    Cook the Bacon

    In a skillet over medium heat, cook the bacon slices until crispy, about 6-8 minutes. Remove from the skillet and place on paper towels to drain excess fat. Once cooled, crumble the bacon into small pieces and set aside.

    Mix Dry Ingredients

    In a large bowl, whisk together the all-purpose flour, baking powder, granulated sugar, and salt until well combined.

    Combine Wet Ingredients

    In another bowl, whisk together the milk, egg, and melted unsalted butter until smooth.

    Combine Mixtures

    Pour the wet mixture into the dry ingredients and mix until just combined. Do not overmix; it's okay if there are still a few lumps. Gently fold in the crumbled bacon.

Frying

    Heat Oil

    In a large, deep pot, heat about 2 inches of vegetable oil to 350°F (175°C) over medium-high heat.

    Fry the Beignets

    Using a spoon or a cookie scoop, carefully drop spoonfuls of the batter into the hot oil, making sure not to overcrowd the pot. Fry for 2-3 minutes on each side or until golden brown.
