Method

Steak Tips

  1. 1

    Sear the Steak Tips

In a large skillet, heat the bacon fat over medium-high heat until hot. Season the filet tips with salt and black pepper. Add the steak tips to the skillet and sear for about 3-4 minutes on each side for medium-rare, or until desired doneness. Remove from heat and set aside.

White Cheddar Fondue

  1. 2

    Prepare the Fondue

In a saucepan, combine heavy cream and garlic over medium heat. Once it begins to simmer, gradually whisk in the white wine. When heated, add the shredded white cheddar cheese and cornstarch, stirring constantly until melted and smooth. Keep warm until serving.

Chimichurri Sauce

  1. 3

    Make the Chimichurri

In a bowl, combine chopped parsley, minced garlic, red wine vinegar, olive oil, red pepper flakes, and salt. Mix well until fully combined and let sit for at least 15 minutes for flavors to meld.

Bourbon Cream Sauce

  1. 4

    Prepare the Bourbon Cream Sauce

In a saucepan, melt butter over medium heat. Add bourbon and brown sugar, stirring until dissolved. Pour in heavy cream and bring to a simmer. Cook for about 5 minutes, stirring occasionally until thickened. Season with salt.

Grilled Bread

  1. 5

    Grill the Bread

Brush the sliced bread with olive oil and sprinkle with garlic powder. Heat a grill or grill pan over medium heat. Grill the bread until toasted and golden brown on both sides, about 2-3 minutes per side.
