Sliced Filet

    Prepare the Filets

    Season the filet mignon with salt and black pepper on both sides.

    Sear the Filets

    In a large skillet, heat the olive oil over medium-high heat. Add the seasoned filets and sear for about 4-5 minutes on each side for medium-rare, or until desired doneness is reached.

    Rest the Filets

    Remove the filets from the skillet and let them rest for 5 minutes before slicing.

Mashed Potatoes

    Boil the Potatoes

    Peel and chop the potatoes into uniform pieces. Place in a large pot and cover with cold water. Bring to a boil and cook until fork-tender, about 15-20 minutes.

    Mash the Potatoes

    Drain the potatoes and return them to the pot. Add the butter, heavy cream, garlic powder, and salt. Mash until smooth and creamy.

Roasted Vegetables

    Prepare the Vegetables

    Preheat the oven to 425°F (220°C). Chop the carrots, zucchini, and bell peppers into bite-sized pieces.

    Roast the Vegetables

    In a bowl, toss the vegetables with olive oil, salt, and black pepper. Spread them on a baking sheet and roast for 20-25 minutes, or until tender and slightly caramelized.

Bourbon Cream Sauce

    Sauté Shallots

    In the same skillet used for the filets, melt the butter over medium heat. Add the minced shallots and sauté until translucent, about 2-3 minutes.

    Add Bourbon

    Carefully add the bourbon to the skillet and let it simmer for about 5 minutes, scraping up any browned bits from the bottom of the pan.

    Finish the Sauce

    Stir in the heavy cream, salt, and black pepper. Simmer for an additional 5 minutes until the sauce thickens slightly.
