    Prepare the Glass

    Chill a coupe or rocks glass by filling it with ice water and setting it aside while you prepare the cocktail.

    Rinse the Glass with Absinthe

    Empty the ice water from the glass. Pour 0.5 oz of absinthe into the chilled glass, swirling it around to coat the inside. Discard any excess absinthe.

    Mix the Cocktail

    In a mixing glass filled with ice, combine 2 oz of Old Elk Rum Cask Rye, 0.5 oz of vanilla simple syrup, and 2 dashes of Peychaud's bitters.

    Stir and Strain

    Stir the mixture for about 30 seconds until well chilled. Strain it into the prepared glass.

    Garnish and Serve

    Optionally, garnish with a twist of lemon peel over the drink to enhance the aroma. Serve immediately.
