    Prepare the Ribs

    Preheat the oven to 300°F (150°C). Remove the membrane from the back of the ribs. Rub salt, black pepper, garlic powder, and onion powder all over the ribs.

    Bake the Ribs

    Place the ribs on a baking sheet lined with aluminum foil. Cover the ribs with another piece of foil and bake for 2.5 to 3 hours, until tender.

    Apply BBQ Sauce

    Remove the ribs from the oven and brush the adobo BBQ sauce generously over the ribs. Increase the oven temperature to 400°F (200°C) and bake uncovered for an additional 30 minutes.

    Make the BBQ Sauce

    In a medium saucepan, combine ketchup, apple cider vinegar, brown sugar, adobo sauce, Worcestershire sauce, smoked paprika, and cayenne pepper. Bring to a simmer over medium heat, stirring occasionally. Cook for 15 minutes until thickened.

Potato Salad

    Cook the Potatoes

    In a large pot, cover the potatoes with water and add a pinch of salt. Bring to a boil and cook until tender, about 15-20 minutes. Drain and let cool.

    Prepare the Salad

    In a large bowl, combine the cooled potatoes, mayonnaise, mustard, celery, red onion, salt, black pepper, and chopped hard-boiled eggs. Mix well until combined.

Green Chili Mac & Cheese

    Cook the Pasta

    In a large pot, cook the macaroni pasta according to package instructions until al dente. Drain and set aside.

    Make the Cheese Sauce

    In the same pot, melt the butter over medium heat. Stir in the flour and cook for 1 minute. Gradually whisk in the milk and cook until thickened, about 5 minutes. Stir in the cheddar cheese, Monterey Jack cheese, green chilies, salt, and black pepper until the cheese is melted and smooth.

    Combine and Serve

    Add the cooked macaroni to the cheese sauce and stir to combine. Cook for an additional 2 minutes on low heat, then serve warm.
