Pork Schnitzel

Method

Pork Schnitzel

  1. 1

    Prepare the Pork

Place the pork loin chops between two sheets of plastic wrap and pound them to about 1/4 inch thickness using a meat mallet.

  2. 2

    Set Up Breading Station

Set up three shallow dishes: one with flour, one with beaten eggs, and one with breadcrumbs. Season the flour with salt and pepper.

  3. 3

    Bread the Chops

Dredge each pork chop in flour, shaking off the excess. Dip in beaten eggs, then coat with breadcrumbs, pressing gently to adhere.

  4. 4

    Fry the Schnitzels

In a large skillet, heat vegetable oil over medium-high heat. Fry the schnitzels for about 3-4 minutes on each side, or until golden brown and cooked through. Drain on paper towels.

Mushroom Demi-glacé

  1. 5

    Sauté the Vegetables

In a saucepan, melt butter over medium heat. Add shallots and garlic, sauté until softened.

  2. 6

    Add Mushrooms

Add sliced mushrooms to the pan and cook until they release their moisture and become browned.

  3. 7

    Deglaze the Pan

Pour in the red wine, scraping the bottom of the pan to release any browned bits. Let it simmer until reduced by half.

  4. 8

    Add Broth and Season

Stir in the broth, thyme, salt, and pepper. Let the mixture simmer until it thickens slightly.

Mashed Potatoes

  1. 9

    Cook the Potatoes

In a large pot, cover the chopped potatoes with cold water. Bring to a boil and cook until tender, about 15-20 minutes.

  2. 10

    Drain and Mash

Drain the potatoes and return them to the pot. Mash until smooth.

  3. 11

    Add Butter and Cream

Mix in butter and heavy cream until well combined. Season with salt and pepper to taste.
