Brioche Buns

Method

Fried Chicken Breast

  1. 1

    Prepare the Chicken

In a shallow bowl, mix the flour, cayenne pepper, paprika, garlic powder, salt, and black pepper.

  2. 2

    Marinate

In another bowl, soak the chicken breasts in buttermilk for at least 30 minutes.

  3. 3

    Coat the Chicken

Remove the chicken from the buttermilk, allowing excess to drip off, and coat well in the flour mixture. Repeat for a thicker crust.

  4. 4

    Fry the Chicken

In a large skillet, heat vegetable oil over medium-high heat. Once hot, carefully add the coated chicken breasts and fry for 6-7 minutes on each side until golden brown and cooked through.

Nashville Hot Honey Sauce

  1. 5

    Mix the Sauce

In a small saucepan over low heat, combine honey, cayenne pepper, smoked paprika, garlic powder, and a pinch of salt. Stir until well combined and warmed through.

Pickled Blueberry & Kale Slaw

  1. 6

    Prepare the Slaw

In a bowl, combine chopped kale and fresh blueberries. In a separate bowl, whisk together apple cider vinegar, honey, salt, and black pepper. Pour over the kale and blueberries, and toss to coat. Let it sit for at least 15 minutes to pickle.

Assemble the Sandwich

  1. 7

    Build the Sandwich

On the bottom half of the brioche bun, place a piece of fried chicken. Drizzle generously with Nashville hot honey sauce, then top with pickled blueberry and kale slaw. Finally, add the top half of the brioche bun.
