Method

Preparation of Filet

    Season the Filets

    Sprinkle the filet mignon pieces with salt and black pepper on both sides. Let them sit at room temperature for about 15 minutes.

    Cook the Filets

    In a large skillet, heat a tablespoon of olive oil over medium-high heat. Once hot, add the seasoned filets and sear for about 4-5 minutes on each side for medium-rare, or until desired doneness is reached.

Garlic Butter

    Make the Garlic Butter

    In a small saucepan over low heat, melt the unsalted butter. Add minced garlic and chopped parsley. Stir and cook for 2-3 minutes until fragrant. Remove from heat and set aside.

    Baste the Filets

    Once the filets are cooked to your liking, pour the garlic butter over them and let them rest for 5 minutes.

Chimichurri Sauce

    Prepare the Chimichurri

    In a medium bowl, combine chopped parsley, cilantro, minced garlic, red wine vinegar, olive oil, red pepper flakes, salt, and black pepper. Mix well and let it sit for at least 10 minutes for the flavors to meld.

    Plate the Dish

    Place the garlic butter basted filet mignon on a plate, generously top with chimichurri sauce, and serve with warm dinner rolls on the side.
