Select and Prepare the Bones
Choose high-quality beef bone marrow bones, preferably cut lengthwise to expose the marrow. Rinse the bones under cold water to remove any residue and pat them dry with paper towels.

Preheat the Oven
Preheat your oven to 450°F (230°C). This high temperature will help to roast the bones, allowing the marrow to become soft and flavorful.
Roasting

Season the Bones
Place the bones on a baking sheet, cut side up. Drizzle with olive oil and sprinkle with sea salt and freshly ground black pepper. Optionally, add fresh herbs for added flavor.

Roast the Bones
Put the baking sheet in the preheated oven and roast for about 15-20 minutes, or until the marrow is bubbly and begins to pull away from the bone.
Serving

Serve the Bone Marrow
Remove the bones from the oven and let them cool slightly. Serve the roasted bone marrow directly in the bones with toasted bread on the side for spreading, and garnish with additional fresh herbs if desired.
