Preparation of Bison Rocky Mountain Oysters

Prepare the Bison Testicles
Start by cleaning the bison testicles thoroughly under cold running water. Remove the outer membrane carefully with a sharp knife. Once cleaned, slice them into bite-sized pieces.

Bread the Testicles
Dredge each piece of bison testicle in the flour, shaking off excess. Dip it into the beaten eggs, and finally coat it with bread crumbs. Place the breaded pieces on a plate.

Heat the Oil
In a deep frying pan or a deep fryer, heat oil to 350°F (175°C). Ensure there’s enough oil to submerge the testicle pieces.

Fry the Bison Testicles
Carefully place the breaded bison testicle pieces into the hot oil. Fry in batches to avoid overcrowding. Cook for about 4-5 minutes or until golden brown and crispy.

Drain and Season
Using a slotted spoon, remove the fried testicle pieces and drain them on paper towels. While they are still hot, toss them with the lemon herb spice mix.
