Ahi Tuna Preparation

Season the Tuna
Pat the Ahi tuna steaks dry with paper towels. Sprinkle both sides generously with Cajun seasoning.

Cook the Quinoa
In a saucepan, combine quinoa and water. Bring to a boil, then reduce to low heat, cover, and simmer for about 15 minutes or until water is absorbed.

Add Lemon Flavor
Once cooked, fluff the quinoa with a fork and stir in lemon zest, lemon juice, and salt. Mix well and set aside.
Jalapeño Ponzu Preparation

Mix the Ponzu Sauce
In a small bowl, whisk together the soy sauce, rice vinegar, finely chopped jalapeño, and lime juice until well combined.
Avocado Preparation

Prepare the Avocado
Slice the ripe avocado in half, remove the pit, and scoop out the flesh. Slice into thin pieces and sprinkle with salt to taste.
