    1. Prep and season chicken

    Pat dry the chicken breasts. Season both sides with 1.5 tsp salt and 0.75 tsp black pepper.

    2. Dredge and sear chicken

    Lightly dredge each breast in 0.25 cup all-purpose flour; shake off excess. In a skillet, heat 2 tbsp olive oil over medium-high and sear chicken until golden on each side, about 2–3 minutes per side. Transfer to a plate.

    3. Make piccata sauce base

    In the same skillet, add minced garlic (from 5 cloves) and sauté briefly until fragrant. Deglaze with 0.25 cup dry white wine (optional) and simmer until reduced by half. Stir in 1 cup chicken broth.

    4. Finish sauce with lemon and capers

    Stir in juice from 1 lemon. Add 2 tbsp capers. Simmer 2–3 minutes. Remove from heat and swirl in 2 tbsp extra-virgin olive oil or butter if desired. Sprinkle with 2 tbsp chopped parsley.

    Return chicken to the skillet, spooning sauce over the pieces. Keep warm while preparing the side.

    Tomato Bouillon: In a pot, heat 1 tbsp olive oil and sauté 0.5 medium onion and 2 cloves garlic until translucent.

    Add 2 cups chopped tomatoes and 1 tbsp tomato paste; cook for 5 minutes, stirring.

    Pour in 4 cups water; simmer 15–20 minutes. Season with 0.5 tsp salt and 0.25 tsp pepper.

    Creamy Lettuce Soup: In a pot, heat 1 tbsp olive oil and sauté 0.5 medium onion and 2 cloves garlic until translucent.

    Add 4 cups chopped lettuce and 2 cups vegetable broth; simmer until tender, about 8–10 minutes.

    Blend until smooth; return to a gentle simmer.

    Stir in 1 cup milk and 1 tbsp flour to thicken. Season with 0.25 tsp salt and 0.25 tsp pepper. If sauce is too thick, thin with more broth.

    Wash and spin-dry 6 cups mixed greens. Slice 1 cup cucumber and 0.25 medium red onion; halve 1 cup cherry tomatoes.

    Prepare the dressing: whisk 2 tbsp extra-virgin olive oil with 2 tbsp lemon juice; season with 0.5 tsp salt and 0.25 tsp pepper.
