Method

Desserts

  1. 1

    Prepare oven and pan

Preheat oven to 325°F (165°C). Grease a 9-inch springform pan and line the bottom with parchment if desired.

  2. 2

    Make crust

In a medium bowl, mix graham cracker crumbs, 2 tablespoons sugar, and melted butter until evenly moistened; press into the bottom and about 1 inch up the sides of the pan.

  3. 3

    Bake crust

Bake crust for 8-10 minutes, until set. Remove from oven and let cool completely on a rack.

  4. 4

    Make filling

In a large mixing bowl, beat cream cheese on medium speed until smooth and creamy (about 2-3 minutes).

  5. 5

    Add filling sugar

Add 1 cup sugar for filling and beat until well combined and light.

  6. 6

    Add other filling ingredients

Beat in sour cream and vanilla until the mixture is smooth.

  7. 7

    Incorporate eggs

Add eggs one at a time, beating on low speed just until combined after each addition.

  8. 8

    Assemble cheesecake

Pour filling over the cooled crust; drop spoonfuls of cranberry sauce on top and swirl into the batter to create a ribbon pattern.

  9. 9

    Bake cheesecake

Bake in the 325°F oven for 55-70 minutes, or until the center is slightly set but still wobbly.

  10. 10

    Cool in oven

Turn off the oven and let the cheesecake stand in the oven with the door ajar for 1 hour to prevent cracking.

  11. 11

    Chill and serve

Chill the cheesecake in the refrigerator for at least 4 hours, preferably overnight. Slice and serve chilled.
