    Prepare and cook chicken

    Season chicken lightly with salt and pepper. Grill, pan-sear, or bake until the internal temperature reaches 165°F (74°C). Let rest for 5 minutes, then dice or shred into bite-sized pieces.

    Toast nuts

    In a dry skillet over medium heat, toast walnuts or pecans for 3–4 minutes, stirring frequently until fragrant and golden. Remove from heat and let cool.

    Prep fresh produce

    Core and thinly slice the apples. Slice the red onion into thin slivers. Cut Brie into small cubes.

    Assemble greens and base

    In a large salad bowl, mound the mixed greens. Arrange sliced apples, Brie cubes, red onion, dried cranberries (if using), and toasted nuts atop the greens.

    Make dressing

    Whisk together olive oil, balsamic vinegar, Dijon mustard, and honey (if using). Season with a pinch of salt and pepper.

    Pour dressing over the salad and toss gently to coat. Add the cooked chicken and give a light toss to distribute without breaking the Brie.
