Salad: Chicken Caesar Salad - Blue Zone Inspired

    Prepare Caesar dressing (anchovy-free)

    In a small bowl, whisk together the Greek yogurt, olive oil, lemon juice, Dijon mustard, minced garlic, capers, grated Parmesan (1 tablespoon), salt, and pepper until smooth. If too thick, whisk in a teaspoon of water to reach a creamy pourable consistency.

    Cover and refrigerate dressing for at least 15 minutes to meld flavors.

    Prepare chicken
