    Prepare the Fries

    Wash and cut the Russet potatoes into thin strips. Soak them in cold water for at least 30 minutes to remove excess starch, then drain and pat dry.

    Heat the Oil

    In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C).

    Fry the Potatoes

    Carefully add a batch of the soaked and dried potato strips to the hot oil. Fry until they are golden brown and crispy, about 5-7 minutes. Remove with a slotted spoon and drain on paper towels. Immediately sprinkle with salt.

    Add Parmesan

    While the fries are still hot, sprinkle freshly grated Parmesan cheese over them. Toss to coat evenly.

    Serve

    Serve the fries hot with truffle aioli on the side for dipping.
