Prepare the Bourbon Glazed Bacon
In a skillet over medium heat, cook the bacon until crispy. Drain excess fat and set aside. In the same skillet, add bourbon and brown sugar, stirring until the mixture thickens. Add the bacon back to the skillet and coat it in the glaze. Remove from heat.

Make the Blue Cheese Dressing
In a bowl, combine mayonnaise, sour cream, lemon juice, garlic powder, salt, and black pepper. Crumble in Hook's blue cheese and mix until well combined. Adjust seasoning to taste.

Prepare the Shallots
Thinly slice the shallots and fry in hot oil until crispy. Drain on paper towels and set aside.

Assemble the Wedge Salad
Cut the iceberg lettuce into wedges. Place each wedge on a plate, drizzle with blue cheese dressing, and top with bourbon glazed bacon, crispy shallots, and halved cherry tomatoes.
