    Cook the Pappardelle

    Bring a large pot of salted water to a boil. Add the pappardelle pasta and cook according to package instructions until al dente. Drain and set aside.

    Prepare the Sauce

    In a large skillet over medium heat, add the olive oil. Once hot, add minced garlic and sauté until fragrant, about 1-2 minutes. Be careful not to burn the garlic.

    Combine Ingredients

    Add the cooked pappardelle to the skillet with the garlic. Toss to coat the pasta in the oil and garlic. Crumble the Gorgonzola cheese over the pasta and add the toasted walnuts. Gently toss everything together until the cheese starts to melt slightly.

    Finish with Watercress

    Remove the skillet from heat and fold in the peppery watercress. Season with salt and black pepper to taste.

    Serve

    Divide the pappardelle pasta among plates and serve immediately, garnished with additional walnuts and Gorgonzola if desired.
