Instructions

  1. 1

    Prepare the Crust

Preheat the oven to 350°F (175°C). In a bowl, mix the graham cracker crumbs, sugar, melted butter, and salt until well combined. Press the mixture firmly into the bottom of a 9-inch springform pan. Bake for 10 minutes, then remove and let cool.

  2. 2

    Make the Filling

In a large mixing bowl, beat the softened cream cheese and sugar until smooth. Add the sour cream and vanilla extract, and mix until combined. Add the eggs one at a time, mixing well after each addition. Gradually add the flour and mix until just combined.

  3. 3

    Combine and Bake

Pour the cream cheese mixture over the cooled crust in the springform pan. Bake at 325°F (160°C) for about 60-70 minutes, or until the center is set but still slightly jiggly. Turn off the oven, crack the door open, and let the cheesecake cool in the oven for 1 hour.

  4. 4

    Chill and Serve

Refrigerate the cheesecake for at least 4 hours or overnight. Before serving, toss the seasonal berries with sugar and let them sit for about 15 minutes. Top the cheesecake with the berry mixture and serve.
