Prepare the Sun Chokes
Preheat your oven to 400°F (200°C). Toss the diced sun chokes with olive oil, salt, and black pepper. Spread them on a baking sheet and roast for 25-30 minutes until golden and tender.

Cook the Swiss Chard
In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped Swiss chard and sauté until wilted, about 5-7 minutes. Season with salt and set aside.

Prepare the Lemon Beurre-Blanc
In a small saucepan, combine lemon juice and a tablespoon of water. Bring to a simmer and reduce by half. Lower the heat and whisk in the butter, one tablespoon at a time, until smooth. Season with salt and pepper to taste.

Sear the Skate Wing
Season the skate wings with fennel pollen, salt, and black pepper. In a skillet, heat 1 tablespoon of olive oil over medium-high heat. Sear the skate wings for about 3-4 minutes on each side until golden brown and cooked through.

On each plate, arrange a bed of sautéed Swiss chard, top with the seared skate wing, and scatter the roasted sun chokes and imperial capers around. Drizzle with lemon beurre-blanc before serving.
