Preparing the Fries

    Cut the Potatoes

    Wash and peel the russet potatoes. Cut them into even-sized sticks, about 1/4 to 1/2 inch thick for crispy fries.

    Soak the Potatoes

    Place the cut potatoes in a bowl of cold water and let them soak for at least 30 minutes. This helps to remove excess starch.

    Dry the Potatoes

    After soaking, drain the potatoes and pat them dry with a clean kitchen towel to remove moisture.

    In a large, heavy-bottomed pot or deep fryer, heat vegetable oil to 350°F (175°C). Use a thermometer for accuracy.
