Preparing the Fries

Cut the Potatoes
Wash and peel the russet potatoes. Cut them into even-sized sticks, about 1/4 to 1/2 inch thick for crispy fries.

Dry the Potatoes
After soaking, drain the potatoes and pat them dry with a clean kitchen towel to remove moisture.

Heat the Oil
In a large, heavy-bottomed pot or deep fryer, heat vegetable oil to 350°F (175°C). Use a thermometer for accuracy.

Fry the Potatoes
Carefully add a handful of dried potato sticks to the hot oil. Fry in batches for about 5-7 minutes or until golden brown. Remove and drain on paper towels, then sprinkle with salt.
Assembling the Poutine

In a small saucepan, heat the brown gravy over medium heat until hot. Meanwhile, place the crispy fries on a serving plate.

Sprinkle cheese curds generously over the hot fries.

Sprinkle melted mozzarella cheese over the fries and cheese curds, allowing it to melt slightly from the heat of the fries.

Finally, ladle hot brown gravy over the fries and cheese, ensuring everything is well-covered.
