Method
Preparation of Green Beans
- 1
Wash and trim the green beans, removing the ends.
- 2
Blanch the green beans in boiling water for 2-3 minutes until bright green and tender-crisp. Drain and immediately transfer to an ice bath to stop the cooking.
- 3
Once cooled, drain the beans and pat them dry with paper towels.
Batter Preparation
- 4
In a mixing bowl, combine the all-purpose flour, cornstarch, baking powder, salt, black pepper, and garlic powder.
- 5
Gradually add the ice water to the dry ingredients, whisking until a smooth batter forms. The batter should be thick enough to coat the back of a spoon.
Frying
- 6
In a deep frying pan or pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).
- 7
Dip each green bean into the batter, ensuring it is fully coated, and carefully place it in the hot oil.
- 8
Fry the green beans in batches, avoiding overcrowding the pan, for about 2-3 minutes or until golden brown and crispy.
- 9
Use a slotted spoon to remove the crispy green beans from the oil and drain them on paper towels.
Serving
- 10
Serve the crispy green beans hot, optionally with a dipping sauce of your choice.
