    Prepare the Chicken

    In a large bowl, combine smoked paprika, garlic powder, onion powder, salt, and black pepper. Rub the spice mixture all over the chicken thighs.

    Smoke the Chicken

    Heat a smoker or grill to 225°F (107°C). Place the seasoned chicken thighs in the smoker and cook for about 2 to 3 hours, or until the internal temperature reaches 165°F (74°C).

    Pull the Chicken

    Once the chicken is cooked, remove from the smoker and let it rest for 10 minutes. Use two forks to shred the chicken into bite-sized pieces.

    Mix with BBQ Sauce

    In a large bowl, combine the shredded chicken with BBQ sauce and mix well until the chicken is evenly coated.

    Prepare the Coleslaw

    In a separate bowl, mix coleslaw mix with apple cider vinegar, honey, salt, and pepper to taste. Toss until well combined.

    Assemble the Sandwiches

    Toast the hamburger buns lightly. Place a generous portion of the BBQ pulled chicken on the bottom half of each bun, top with coleslaw, and then cover with the top half of the bun.
