    Prepare the Pork Tenderloin

    Trim any excess fat from the pork tenderloin and cut it into 1-inch thick medallions.

    Set Up Breading Station

    In three separate shallow bowls, place the flour, beaten eggs, and breadcrumbs mixed with garlic powder, onion powder, salt, and pepper.

    Bread the Pork

    Coat each medallion first in the flour, then dip into the eggs, and finally coat in the breadcrumb mixture.

    Heat Oil

    In a large skillet, heat vegetable oil over medium-high heat until shimmering.

    Fry the Pork

    Carefully add the breaded pork medallions to the hot oil and fry for about 3-4 minutes per side or until golden brown and cooked through.
