Prepare the Pork Belly
Start by scoring the skin of the pork belly in a crisscross pattern, being careful not to cut too deep into the meat. This will help the seasoning penetrate and allow for crispy skin.

Season the Pork Belly
In a small bowl, mix together salt, black pepper, paprika, and garlic powder. Rub this mixture all over the pork belly, ensuring it's well coated.

Smoke the Pork Belly
Preheat your smoker to 225°F (107°C). Place the pork belly in the smoker and smoke for about 3 hours, or until it reaches an internal temperature of 195°F (90°C).

Prepare the Glaze
In a saucepan, combine brown sugar, honey, apple cider vinegar, and smoked barbecue sauce. Bring to a simmer and cook for about 10 minutes until it thickens slightly.

Glaze and Caramelize
Once the pork belly is smoked, remove it from the smoker and cut it into bite-sized cubes. Toss the cubes in the glaze and return them to the smoker or place them on a hot grill for about 15-20 minutes, until caramelized.

Serve the smoked burnt ends with your choice of additional sauce on the side.
