Prepare the Onions
Peel the onions and slice them into 1/2 inch thick rings. Separate the rings and set them aside.

Make the Batter
In a large bowl, whisk together the all-purpose flour, cornstarch, baking powder, salt, black pepper, and paprika. Gradually add the buttermilk while stirring until the batter is smooth and thick.

Coat the Onion Rings
Dip each onion ring into the batter, allowing excess to drip off, then coat with panko breadcrumbs, pressing lightly to adhere.

Heat the Oil
In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C).

Fry the Onion Rings
Carefully place a few battered onion rings into the hot oil. Fry for about 3-4 minutes or until golden brown, turning occasionally. Remove with a slotted spoon and drain on paper towels.

Serve hot with a choice of ranch or chipotle ranch dressing.
