    Prepare the Ingredients

    Slice the onion into rings and set aside. Drain the pineapple chunks if using canned.

    Grill the Onion

    Heat 1 tablespoon of olive oil in a skillet over medium heat. Add the onion rings and grill until they are soft and caramelized, about 5-7 minutes. Season with salt and pepper. Remove from skillet and set aside.

    Heat the Ham

    In the same skillet, add the remaining tablespoon of olive oil. Add the ham and cook until heated through, about 3-4 minutes.

    Add Pineapple

    Add the pineapple chunks to the skillet with the ham and stir to combine. Cook for an additional 2-3 minutes until the pineapple is heated through.

    Combine and Serve

    Serve the ham and pineapple mixture topped with the grilled onions. Garnish with fresh parsley if desired.
