Prepare the Chicken
Cut the boneless chicken breasts into bite-sized chunks and place them in a bowl. Pour the buttermilk over the chicken and let it marinate for at least 30 minutes.

Prepare the Breading
In a separate bowl, mix together the flour, cornstarch, salt, black pepper, garlic powder, onion powder, and paprika.

Heat the Oil
In a deep frying pan, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Coat the Chicken
Remove the chicken from the buttermilk, allowing excess to drip off. Dredge each piece in the flour mixture, coating well.

Fry the Chicken
Carefully place the coated chicken pieces in the hot oil, making sure not to overcrowd the pan. Fry until golden brown and cooked through, about 5-7 minutes. Remove and drain on paper towels.

Sauce and Serve
Toss the fried chicken in your choice of hot sauce, if desired. Serve with house-made ranch dressing on the side.
