Wash and peel the russet potatoes. Cut them into thin strips, about 1/4 inch thick.

Drying the Potatoes
Drain the potatoes and pat them dry with paper towels to remove excess moisture.

In a deep fryer or a large pot, heat the vegetable oil to 350°F (175°C).

Frying the Potatoes
Carefully add the dried potato strips to the hot oil in batches, ensuring not to overcrowd. Fry for about 5-7 minutes or until golden brown and crispy.

Remove the fries from the oil with a slotted spoon and drain them on paper towels. Immediately sprinkle with salt and black pepper while hot.
