Falafel Preparation

Soak the Chickpeas
In a bowl, soak the dried chickpeas in water overnight or for at least 8 hours until they double in size.

Prepare the Falafel Mixture
Drain and rinse the soaked chickpeas. In a food processor, combine chickpeas, chopped onion, minced garlic, parsley, cumin, coriander, baking powder, salt, and black pepper. Pulse until the mixture is coarse but holds together.

Shape the Falafel
Using wet hands, shape the mixture into small balls or patties, about 1.5 inches in diameter.

Fry the Falafel
Heat oil in a deep skillet over medium heat. Fry the falafel in batches until golden brown and crispy, about 4-5 minutes per side. Remove and drain on paper towels.

Serve
Arrange the crispy falafel on a platter and serve with fresh sides like tahini sauce, pita bread, and a salad.
