Preheat the Oven
Preheat your oven to 450°F (230°C). This high temperature will help sear the beef and lock in the juices.

Prepare the Beef
Rub the beef roast with olive oil, ensuring it is evenly coated. Then, season generously with salt, black pepper, garlic powder, onion powder, and thyme.

Roast the Beef
Place the seasoned beef roast on a roasting pan. Roast in the preheated oven for 15 minutes, then reduce the temperature to 325°F (165°C) and continue to roast for about 1 to 1.5 hours, or until a meat thermometer registers 135°F (57°C) for medium-rare.

Rest the Beef
Remove the roast from the oven and let it rest for at least 15 minutes before slicing. This allows the juices to redistribute.

Slice the Beef
Once the roast has rested, slice it thinly against the grain for the best texture.

Prepare the Bread
Take your choice of bread (White, Wheat, or Rye) and spread mayonnaise evenly on one side of each slice.

On one slice of the prepared bread, layer the sliced roast beef, followed by lettuce, tomato slices, and cheese if desired. Top with another slice of bread.

Cut the sandwich in half if desired, and serve immediately with your choice of sides.
