Prepare the Liver
Rinse the beef liver under cold water and pat dry with paper towels. Remove any connective tissue and cut the liver into 1/2 inch thick slices.

Prepare the Onions
Peel and slice the onions into thin rings.
Breading the Liver

Set Up Breading Station
Set up a breading station with three shallow dishes. In the first dish, add the flour mixed with salt and black pepper. In the second dish, beat the eggs. In the third dish, place the breadcrumbs.

Bread the Liver
Coat each slice of liver first in the flour, shaking off excess, then dip into the beaten eggs, and finally coat with breadcrumbs. Set aside on a plate.

Cook the Onions
In a large skillet, heat 1 tablespoon of olive oil and 1 tablespoon of butter over medium heat. Add the sliced onions and sauté until they are soft and caramelized, about 10-15 minutes. Remove from skillet and keep warm.
