For the Roast Beef

    Prepare the Roast Beef

    In a large skillet, heat olive oil over medium-high heat. Season the chuck roast with salt, black pepper, onion powder, and garlic powder.

    Sear the Roast

    Sear the roast in the hot skillet for about 4-5 minutes on each side until browned.

    Cook the Roast

    Transfer the seared roast to a slow cooker, add 2 cups of beef broth, and cook on low for 6-8 hours or until tender. Once cooked, slice the roast thinly.

For the Gravy

    Make the Roux

    In a saucepan, melt the butter over medium heat. Stir in the flour and cook for 2-3 minutes, stirring constantly until golden.

    Add Broth

    Gradually whisk in 4 cups of beef broth and Worcestershire sauce until smooth, and bring to a simmer.

    Season the Gravy

    Continue cooking until the gravy thickens, about 5-10 minutes. Season with salt and black pepper to taste.

For the Mashed Potatoes

    Boil the Potatoes

    Peel and chop the potatoes into even pieces. Place them in a large pot, cover with cold water, and bring to a boil. Cook until tender, about 15-20 minutes.

    Mash the Potatoes

    Drain the potatoes and return them to the pot. Add butter, milk, salt, and black pepper. Mash until smooth and creamy.

For Assembly

    Assemble the Sandwich

    On each slice of bread, layer the sliced roast beef and top with provolone cheese. Optionally, you can toast the sandwich in a skillet until the cheese is melted.

    Serve the hot beef sandwiches alongside a generous scoop of mashed potatoes and drizzle with gravy.
