Fish Preparation

Prepare the Batter
In a large mixing bowl, whisk together the all-purpose flour, cornstarch, baking powder, salt, and black pepper.

Add Liquid
Gradually add the cold beer or sparkling water to the dry ingredients, whisking until the batter is smooth and thick.

Heat the Oil
In a large, deep skillet or fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Batter the Cod
Dip each cod fillet into the batter, allowing any excess to drip off.

Fry the Fish
Carefully lower the battered cod fillets into the hot oil. Fry for about 4-5 minutes, or until golden brown and cooked through. Remove and drain on paper towels.

Prepare the Potatoes
Peel and cut the russet potatoes into thick strips (fries).

Soak the Fries
Soak the cut potatoes in cold water for at least 30 minutes to remove excess starch.

Dry the Fries
Drain and thoroughly dry the soaked potatoes using a clean kitchen towel.

Heat the Oil
In a separate pot or deep fryer, heat the vegetable oil to 350°F (175°C).

Fry the Fries
Carefully add the potatoes to the hot oil in batches. Fry until golden and crispy, about 5-7 minutes. Remove and drain on paper towels, then season with salt.
