Method

Chicken Fried Chicken

  1. 1

    Prepare the Chicken

Pound the chicken breasts to an even thickness for uniform cooking.

  2. 2

    Season and Breading

In one bowl, combine buttermilk, eggs, salt, black pepper, garlic powder, and onion powder. In another bowl, place the flour. Dip each chicken breast first in the buttermilk mixture, then coat it in flour. Shake off excess flour.

  3. 3

    Fry the Chicken

Heat oil in a large skillet over medium-high heat. Once hot, add the breaded chicken breasts and fry for 5-7 minutes on each side or until golden brown and cooked through. Remove and drain on paper towels.

Mashed Potatoes

  1. 4

    Cook the Potatoes

Peel and chop the russet potatoes into even-sized pieces. Boil in salted water until tender, about 15-20 minutes. Drain and return to the pot.

  2. 5

    Mash and Season

Add butter, milk, salt, and black pepper to the potatoes. Mash until smooth and creamy.

Country Gravy

  1. 6

    Make the Roux

In the same skillet used for frying chicken, add reserved cooking oil. Stir in flour and cook for 1-2 minutes until golden.

  2. 7

    Add Milk and Season

Gradually whisk in milk, stirring constantly, until thickened. Season with salt and black pepper.

Corn

  1. 8

    Prepare the Corn

In a saucepan, melt butter over medium heat. Add frozen corn and cook until heated through, about 5-7 minutes. Season with salt to taste.

Biscuits

  1. 9

    Prepare the Biscuit Dough

Preheat the oven to 450°F (230°C). In a bowl, mix flour, baking powder, and salt. Cut in cold butter until the mixture resembles coarse crumbs.

  2. 10

    Add Milk and Shape

Stir in milk until just combined. Turn dough onto a floured surface and gently knead. Roll to 1-inch thickness and cut into rounds.

  3. 11

    Bake the Biscuits

Place biscuits on a baking sheet and bake for 12-15 minutes until golden brown.
