Method
Preparing the Hushpuppies
- 1
Mix Dry Ingredients
In a large bowl, combine the cornmeal, all-purpose flour, baking powder, salt, and sugar. Whisk together until well combined.
- 2
- 3
Incorporate Cheese and Onions
Fold in the shredded sharp white cheddar cheese and chopped green onions into the batter until evenly distributed.
- 4
Heat Oil for Frying
In a large, deep pot, heat vegetable oil over medium-high heat until it reaches 350°F (175°C). You can test the oil by dropping a small amount of batter in; if it sizzles, it’s ready.
- 5
Fry Hushpuppies
Using a small scoop or tablespoon, drop spoonfuls of the batter into the hot oil. Fry in batches, being careful not to overcrowd the pot. Cook for about 2-3 minutes on each side or until golden brown. Remove and drain on paper towels.
Making the Goat Cheese Crema
- 6
Blend Ingredients
In a medium bowl, combine the softened goat cheese, sour cream, lemon juice, and salt. Mix with a fork or a hand mixer until smooth and creamy.
Serving
- 7
Plate and Drizzle
Serve the hushpuppies warm with a generous dollop of goat cheese crema on the side. Drizzle Steen’s sugarcane syrup over the hushpuppies for a sweet finish.
