Turkey Preparation

Preheat the Oven
Preheat your oven to 325°F (165°C).

Prepare the Turkey
Remove the turkey from the refrigerator and let it sit at room temperature for about 30 minutes.

Season the Turkey
Rub the turkey all over with olive oil, then season generously with salt and pepper. Make sure to get inside the cavity as well.

Add Herbs and Aromatics
Chop the rosemary, thyme, and sage, and mix them together. Stuff the herb mixture, garlic cloves (whole), onion (quartered), carrots (cut into chunks), and celery (cut into chunks) into the turkey's cavity.

Place in Roasting Pan
Place the turkey breast side up on a rack in a large roasting pan. Pour the chicken broth into the bottom of the pan.

Roast the Turkey
Roast the turkey in the preheated oven for about 13-15 minutes per pound, or until the internal temperature reaches 165°F (75°C).

Baste the Turkey
Baste the turkey every 30 minutes with the pan drippings to keep it moist.

Rest the Turkey
Once cooked, remove the turkey from the oven and let it rest for at least 20-30 minutes before carving.

Make Roux
In a saucepan over medium heat, add the fat from the drippings and whisk in the flour. Cook for about 2-3 minutes until it turns golden brown.

Add Broth
Slowly whisk in the chicken broth and bring it to a simmer. Cook until it thickens, about 5-10 minutes.

Season the Gravy
Add salt and black pepper to taste and stir well.

Serve
Serve the gravy warm over sliced turkey.
