Method

Pimento Cheese Grits

    Cook the Grits

    In a large pot, bring 4 cups of water to a boil. Add the grits and stir well. Reduce heat to low, cover, and simmer for about 20 minutes, stirring occasionally.

    Add Milk and Cheese

    Once the grits are tender, stir in the milk, pimento cheese, butter, salt, and black pepper. Cook for an additional 5 minutes, stirring until creamy and smooth.

Charred Tomato Butter

    Char the Tomatoes

    In a skillet over medium-high heat, add the cherry tomatoes and cook until they are charred and blistered, about 5-7 minutes. Stir occasionally.

    Make the Butter Sauce

    Add butter, minced garlic, balsamic vinegar, salt, and black pepper to the skillet with the charred tomatoes. Stir until the butter is melted and everything is well combined.

Shishito Relish

    Prepare the Peppers

    In a skillet over medium heat, add the shishito peppers and cook until blistered, about 5 minutes. Remove from heat and chop into small pieces.

    Mix the Relish

    In a bowl, combine chopped shishito peppers, diced red onion, lime juice, olive oil, and salt. Mix well and set aside.

Shrimp

    Cook the Shrimp

    In a skillet, heat olive oil over medium heat. Add minced garlic and cook for 1 minute until fragrant. Then add the shrimp, salt, and black pepper. Cook until shrimp are pink and opaque, about 3-4 minutes.

Assembly

    Plate the Dish

    Spoon a generous portion of pimento cheese grits onto each plate. Top with the cooked shrimp, drizzle with charred tomato butter, and finish with a spoonful of shishito relish.
