Short Rib Grilled Cheese Recipe

Our Short rib is braised for 4 hrs. and shredded and mixed with caramelized Vidalia onions, stewed in a rich red wine beef jus. The grilled cheese is toasted in butter topped with mixed cheeses and served with BBQ chips.

Short Rib Preparation

    Braise the Short Ribs

    In a large Dutch oven, heat olive oil over medium-high heat. Season the short ribs with salt and black pepper. Sear the short ribs on all sides until browned, about 3-4 minutes per side. Remove and set aside.

    Caramelize Onions

    In the same pot, add sliced Vidalia onions and cook over medium heat until caramelized, about 15-20 minutes.

    Combine Ingredients

    Add minced garlic to the onions and cook for an additional minute. Return the short ribs to the pot, add red wine, beef broth, and bay leaves. Bring to a simmer.

    Braise

    Cover the pot and reduce the heat to low. Braise for about 4 hours or until the short ribs are tender. Remove the short ribs, shred the meat, and mix with the onions and broth. Set aside.

Grilled Cheese Preparation

    Prepare the Bread

    Spread butter on one side of each slice of sourdough bread.

    Assemble the Sandwiches

    On the unbuttered side of four slices, layer the cheddar, gruyère, and Parmesan cheese. Add a generous portion of the short rib filling and top with the remaining slices of bread, buttered side out.

    Grill the Sandwiches

    Heat a skillet over medium heat. Grill the sandwiches for about 3-4 minutes on each side or until the bread is golden brown and the cheese is melted.

Serving

    Plate and Serve

    Cut the grilled cheese sandwiches in half and serve with BBQ chips on the side.
