Method

Crust Preparation

    Make the crust

    In a medium bowl, combine the chocolate wafer cookies, melted butter, and granulated sugar. Mix until the cookies are evenly coated and crumbly.

    Form the crust

    Press the mixture firmly into the bottom and up the sides of a 9-inch pie dish. Use the back of a measuring cup or your fingers to create an even layer.

    Bake the crust

    Preheat your oven to 350°F (175°C) and bake the crust for about 10 minutes. Remove from the oven and let it cool completely.

Chocolate Cremeux Preparation

    Heat the cream

    In a saucepan, heat 1 cup of heavy cream over medium heat until just simmering. Remove from heat and add chopped bittersweet chocolate. Stir until melted and smooth.

    Prepare the egg mixture

    In a separate bowl, whisk together the egg yolks and ¼ cup of granulated sugar until pale and thick.

    Combine mixtures

    Gradually pour the warm chocolate mixture into the egg yolk mixture, whisking constantly to prevent curdling. Return the combined mixture to the saucepan.

    Cook the cremeux

    Cook over low heat, stirring continuously until the mixture thickens and coats the back of a spoon, about 5-7 minutes. Remove from heat and stir in vanilla extract.

    Cool the chocolate cremeux

    Pour the chocolate cremeux into the cooled crust and spread evenly. Refrigerate for at least 2 hours or until set.

Cookies & Cream Whipped Topping Preparation

    Whip the cream

    In a large mixing bowl, beat 1 cup of heavy cream with an electric mixer on medium speed until it starts to thicken.

    Add sugar and vanilla

    Add 2 tablespoons of powdered sugar and 1 teaspoon of vanilla extract. Continue beating until medium peaks form.

    Fold in crushed Oreos

    Gently fold in 1 cup of crushed Oreo cookies until combined.

Assembly

    Top the pie

    Once the chocolate cremeux is set, spread the cookies & cream whipped topping evenly over the top of the pie.

    Garnish and serve

    Optionally, sprinkle additional crushed Oreo cookies on top for garnish. Slice and serve chilled.
