Dough Preparation

Make the Dough
In a large bowl, combine the all-purpose flour and salt. Add the chilled, cubed butter and mix using a pastry cutter or your fingers until the mixture resembles coarse crumbs.

Form the Dough
Gradually add ice water, one tablespoon at a time, mixing until the dough comes together. Be careful not to overmix. Divide the dough into two disks, wrap in plastic wrap, and refrigerate for at least 30 minutes.

Prepare the Filling
In a medium bowl, combine the sharp cheddar cheese, softened cream cheese, chopped pimentos, garlic powder, onion powder, cayenne pepper, salt, and black pepper. Mix until thoroughly combined and smooth.
Assembly and Baking

Roll Out the Dough
Preheat your oven to 400°F (200°C). On a floured surface, roll out one disk of dough to about 1/8 inch thickness. Use a round cutter (about 4 inches in diameter) to cut circles from the dough.

Fill the Hand Pies
Place a tablespoon of the pimento cheese filling in the center of each dough circle. Top with a small dollop of sweet & spicy pepper jelly.

Seal the Pies
Fold the dough over to form a half-moon shape and press the edges together firmly. Use a fork to crimp the edges for a decorative finish. Repeat with the remaining dough and filling.

Bake the Hand Pies
Place the hand pies on a parchment-lined baking sheet. Bake in the preheated oven for 20-25 minutes or until golden brown. Remove from the oven and let cool slightly before serving.
