For the Scallops

    Prepare the Scallops

    Pat the sea scallops dry with a paper towel and season both sides with salt and black pepper.

    Sear the Scallops

    In a large skillet, melt 2 tablespoons of butter over medium-high heat. Once hot, add the scallops and sear for about 2-3 minutes per side until golden brown. Add minced garlic in the last minute of cooking.

    Add Lemon Juice

    Remove the scallops from the skillet and add lemon juice and remaining butter. Stir until melted and combined.

For the Potato Purée

    Boil the Potatoes

    Peel and chop the potatoes into equal-sized pieces. Place in a pot of salted water and boil until tender, about 15-20 minutes.

    Mash the Potatoes

    Drain the potatoes and return to the pot. Add butter and heavy cream, then mash until smooth. Season with salt to taste.

For the French Curry Tomato Butter

    Make the Tomato Butter

    In a small saucepan, melt the butter over low heat. Stir in the tomato paste, curry powder, and lemon zest. Cook until warmed through, then season with salt to taste.

For the French Beans

    Prepare the French Beans

    Trim the ends of the French beans and blanch in boiling salted water for 3-4 minutes until bright green. Immediately transfer to an ice bath to stop cooking.

    Sauté the French Beans

    In a skillet, melt butter over medium heat. Add the blanched French beans and sauté for 2-3 minutes. Season with salt to taste.
