    Prepare the Chicken

    Preheat your oven to 425°F (220°C). Rinse the chicken under cold water and pat it dry with paper towels. Rub the entire chicken with olive oil, salt, black pepper, and garlic powder, ensuring it’s evenly coated.

    Roast the Chicken

    Place the chicken breast-side up on a roasting pan. Roast in the preheated oven for about 45-50 minutes or until the internal temperature reaches 165°F (74°C). During the last 10 minutes of cooking, brush the chicken with BBQ sauce for a nice glaze.

    Rest the Chicken

    Once the chicken is cooked, remove it from the oven and let it rest for 10-15 minutes before carving.

Potato Purée

    Cook the Potatoes

    While the chicken is roasting, peel and cube the Yukon Gold potatoes. Place them in a large pot of salted water and bring to a boil. Cook until fork-tender, about 15-20 minutes.

    Make the Purée

    Drain the potatoes and return them to the pot. Add butter and heavy cream. Mash the potatoes until smooth and creamy. Season with salt and black pepper to taste.

French Beans

    Sauté the Beans

    In a separate pan, heat olive oil over medium heat. Add the French beans and sauté for about 5-7 minutes until tender-crisp. Season with salt and ground black pepper to taste.
