Fried Green Tomatoes

    Slice the green tomatoes into 1/2 inch thick slices. Sprinkle both sides with salt and let them sit for about 10 minutes to draw out moisture.

    In three separate shallow dishes, place flour in the first, beaten eggs mixed with milk in the second, and a mixture of cornmeal, salt, and pepper in the third.

    Dredge each tomato slice first in flour, then dip into the egg mixture, and finally coat with the cornmeal mixture. Ensure each slice is well coated.
