Roast the Butternut Squash
Preheat your oven to 400°F (200°C). Peel and dice the butternut squash into small cubes. Place the cubes on a baking sheet, drizzle with 1 tablespoon of olive oil, and season with salt and pepper. Toss to coat evenly and spread out in a single layer. Roast for about 25-30 minutes, or until tender and slightly caramelized. Allow to cool.

Prepare the Kale
While the squash is roasting, wash and dry the kale. Remove the tough stems and tear the leaves into bite-sized pieces. In a large bowl, add the kale and drizzle with a small amount of olive oil. Massage the leaves with your hands for about 2-3 minutes until they soften and darken in color.

Once the butternut squash has cooled, add it to the bowl with the kale. Then add the pomegranate seeds, crumbled feta cheese, and pumpkin seeds. Gently toss all the ingredients together.
